Lemon curd apple crumble

Having a lot of lime curd made me think about other ways to use that, instead of topping muffins or adding to whipped cream. So here’s a recipe for a delicious apple crumble with lemon curd!!

8 apples

150 grams of almond flour

1 tsp vanilla extract

8 tbsp lemon curd

4 tbsp honey

1 tbsp coconut oil

Preheat the oven at 180/350. Cut the apples in half and place them in a dish. Mix the almond flour, vanilla, honey and liquid coconut oil in a bowl. Place one tbsp of lemon curd in each apple. Top the dish with the almond crumble. Place it in the oven for about 20-30 minutes. Enjoy! And it’s even better after a night in the fridge…
