All about cookies

Well, I decided to try out six different versions of one cookie recipe…

The regular one with loads of sugar and flour, the healthy no-sugar no-butter oatmeal version and the inbetween spelt option. And all the versions with cranberry/walnut and chocolate… The kids obviously chose the loads-of-sugar with chocolate:). I like all three versions, depending on your taste and craving. So here’s all three:

Preheat oven at 180c

Sweet sugar cookies

100 gr selfraising flour
Pinch of salt
50 gr butter
30 gr white soft suger
30 gr dark soft sugar
1 tsp vanilla extract
1 small egg (1/2 regular egg)
40 gr cranberries
25 gr walnuts
(Or go for 50 gr. chocolate instead of the cranberry and walnut)

Spelt & sugar cookies

100 gr spelt flour
1 tsp baking powder
Pinch of salt
50 gr butter
30 gr soft dark sugar
1 tbsp agave syrup
1 tsp vanilla extract
1 small egg (or 1/2 regular egg)
Same amount of cranberries/walnuts or chocolate as above)

Oatmeal spelt cookies

50 gr oatmeal
50 gr spelt flour
Pinch of salt
50 gr coconut oil
6 dates, finely chopped
1 tbsp of agave syrup
1 tsp vanilla extract
1 small egg (or 1/2 regular egg)
Same amount of cranberries/walnut or chocolate as above

Put all the ingredients except the cranberries/walnuts/chocolate in a bowl and kneed it into a nice dough. Add the extra ingredients and make small balls (each recipe makes 6-9 cookies). Put them on a tray and press them into a cookie. Bake for about 13 min.

The middle recipe crumbles easily, but tastes very nice!
