Healthy carrot cake muffins

Love carrot cake, but most recipes contain a whole lot of sugar. I tried one with  almost no sugar at all!! (For cake standards…). The result are these great breakfast or lunch muffins…

1 ripe banana

4 dates

2 tbsp agave syrup

2 eggs

1/4 cup olive oil

1 grated sweet apple

1/2 cup brown sugar

1/2 tsp seasalt

1,5 tsp baking powder

1 tsp cinnamon

1/2 cup almond milk

2 cups grated carrot

2/3 cup oats

1/2 cup almond flour

1 cup spelt flour

1/4 cup walnuts for decoration




Mash the banana, dates and agave syrup in a blender. 

Mix the eggs and add the banana mixture and olive oil. 

Stir in the apple, salt, cinnamon and baking soda. Add the almond milk  and the grated carrot. Then add the oats, almond flour and spelt flour. Divide the mixture into 12 muffins. Decorate with walnuts. 

Bake at 175c/350f for at least 36 min.
