Well, still trying out new recipes, and the most important one is the banana bread variation. I’d like a recipe with a little less almond flour, so I made up this combination:
1 tsp baking soda
75 grams of oats
75 grams spelt flour
20 grams grated coconut
100 grams chopped nuts (I used walnuts, almonds and hazelnuts)
Mash the banana and dates in the blender. In another bowl mix the eggs with a pinch of salt. Add the banana mixture and then stir in the rest of the ingredients. Bake at 175c/350f for 40 min.
