It’s that time of the year, you can grab a bag and your kids and go out to collect elderflower! There are probably multiple spots in the area where you can find them if you know what to look for. We got a whole bunch this weekend and one of the things we made was syrup.
A lot of elderflower 2 liters of water
1500 gr sugar
Slice the lemons and put them in a bowl with the elderflower and the water. Let it soak for 24 hours. Filter the water and squeeze the flowers and lemons so you get all the juice. Put it in a pan, add the sugar and let it simmer until the sugar is dissolved. Put the syrup into sterilized bottles while still hot and close the bottles.
Enjoy it the rest of the summer with ice, or prosecco, or smoothies, or……
